Watermelon Wine Spritzer

Find it On Pinterest

Cook's Note: I was watching Valerie Bertinell's new show on the Cooking Channel and saw her make watermelon smoothies for her kids & I had the great idea to cruise Pinterest and see how I could make a watermelon drink for adults! I stumbled upon a few different recipes and I decided to combine a few together and make them my own (as I always do!) I love playing around with recipes and this one is a keeper.

If you love watermelon, you will LOVE this drink on a hot day (or any day that you need an adult beverage!)

What You Will Need:

A good BLENDER (like a Ninja or a Bullet)
6 Cups of Seedless Watermelon Chunks
1 Can of Frozen Limeade (slightly thawed to thawed)
1 cup of Ice
Mint Springs (use as many as you like to throw in! I threw in about 10 or 12)

Sparkling Water
White Wine of your Choice (I used Chardonnay. This drink is already sweet, so a sweet wine will make it too sweet, I think!)

Directions:

In your blender, throw in Watermelon chunks, Limeade, Ice and Mint Springs and blend away until the consistency of a smoothie.

Now, get out your glasses that you want to serve this in! Fill each glass half way with a little sparkling water and a little white wine and top the rest off with the Watermelon mixture.

Garnish with Mint Springs or Watermelon Chunks or Slices on the side.

** YOU AN ALWAYS OMIT THE WINE and just make this a sparkling drink, using only the sparkling water. ***

Serves 4-6

 ENJOY!

Berry Green Smoothie

Find it On Pinterest

I love nothing more than having a healthy smoothie for breakfast. Its a great way to pack in lots of nutrition quickly. This smoothie is delicious. I want to give a tip on buying KALE. Buy organic because it's part of the "dirty dozen" veggies. It freezes well... so if you buy a big bunch, you can strip it from the stem and place in a freezer bag and freeze beautifully. Both Kale or Spinach will work for this recipe!

Ingredients:

2 large hand fulls of Kale or Spinach
1 Banana
2 Tbsp Honey
7-8 Strawberries
1 Tbsp Flax Seed Meal
1/3 cup Organic Milk

Directions:

Blend together all ingredients in a good blender until rich, creamy and smooth. Pour into a nice glass with a fat straw and enjoy all the nutrients that your body is getting!

Enjoy!

Flat Belly Diet Vanilla Yogurt and Berry Smoothie

Find it on Pinterest

Cooks Note: Because after 3 kids I am all about flat bellies, I decided to give this one a try. To me it tasted more vanilla yogurty (new word, look it up ;)) than berryish, it was still really good and really healthy. I did not have blueberries on hand so I used blackberries and raspberries, which is why it turned out so gorgeous! This is a great addition to your New Year diet. Enjoy!

Serves: 1

Ingredients:

1 cup skim or soy milk
1 cup fresh berries
6 oz vanilla yogurt
1 cup ice or frozen berries
1 T flaxseed oil

Directions:

Combine milk, yogurt, fresh berries and ice or frozen berries in blender
Blend for 1 minute
Pour into glass and stir in flaxseed oil

Victoria Justice Peanut Butter and Banana Power Shake

Find it on Pinterest

Cooks Note: My daughter LOVES Victoria Justice, the Nickelodeon star. So I thought, hey why not try some kid celeb recipes in an effort to make eating better, cool. Well it worked. I made this smoothie, which is really good if you like peanut butter as much as we do, and I let my daughter try it. I didn't tell her what is was, and she said, "It's pretty good, what is it?" I told her it was Victoria Justice's favorite smoothie and she said, "REALLY? WOW, I really like it a lot!"  and proceeded to drink almost the whole thing. Score: Mom-1 Kid-0.

Ingredients:

8 oz. skim milk
1 sliced banana
1/4 cup ice
2 tbsp. peanut butter

Directions: Toss all ingredients into a blender, puree for 1 minute or until creamy, but not liquidy.
