Weight Watchers Taco Soup 4 Points (6 Points + )

Cook's Note: Even if you are not doing Weight Watchers, this is a delicious soup to make on a cold fall or winter's evening! I found this recipe on .... drumroll please.... PINTEREST and tried it for my family. Everyone loved this healthy soup - even my little one... SCORE!

Again, this is just a healthy soup that anyone can eat and enjoy. Add some toppings and make it fun!


What You Will Need: 

1 Lb of Lean Ground Turkey Breast 
1 packet of Taco Seasoning (Low Sodium)
1 Packet of Ranch Dressing mix (Like Hidden Valley Ranch)
** Water as needed
1 large 28 oz can of Diced Tomatoes
1 15 oz can of Diced Tomatoes
1 15 oz can of Hormel Vegetarian Chili 
1 15 oz can of Black Beans (drained)
1 15 oz can of Whole Kernel Corn (drained) 
2 cups of Water

Directions: 

Brown the ground turkey breast until done. Once cooked thoroughly; add ranch mix and taco seasoning. Add water (1/4 cup at a time) to ensure mixture is thoroughly mixed. 

In a large soup pot - add turkey meat and all other ingredients.Bring to a boil. 

Once boiling reduce heat to medium low and let simmer for one hour. 

Serve with crumbled up low fat/fat free cheese and crushed up tortilla chips. 

Weight Watchers 4 Points per serving or 6 Points +

Serving Size is about 1 1/4 cup

Frozen Hot Chocolate

Cook's Note: I wanted to make a yummy beverage for a late afternoon snack and ran across this in Pinterest. This is SO SIMPLE to make and has ingredients that you probably have on hand in your house. Everyone will love this! 


What You Will Need: 

3-4 Packets of Hot Chocolate (depending on how sweet you like it)
1 1/3 cup of Skim Milk
20 Ice Cubes
Whipped Cream of Topping


Directions: 


In a blender: empty hot chocolate packets and add ice and milk. Blend until smooth. Serve in coffee mugs and top with whipped cream.

Drink with a straw and enjoy this tasty treat!

Blueberry Oatmeal Pancakes

Cook's Note: I sometimes get in the mood to make a nice breakfast on the weekends and this was right up my alley because it was a healthy version of pancakes. I found the recipe on Pinterest (where else?)  and made it for my family. My toddler thought these were "delicious" and I am happy to make these again! Hoping you will try it for your breakfast too! 

What You Will Need: 

1 2/3 cups all-purpose flour (or you can use Whole Wheat/Almond/ or Coconut Flour)
2/3 cup old-fashioned rolled oats
2 tablespoons sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup plain Greek yogurt
1 cup milk
4 tablespoons unsalted butter, melted
2 large eggs
1 cup organic blueberries

Directions: 

In a large bowl, mix together flour, oats, sugar, baking powder, baking soda and salt.

In a large bowl, whisk together yogurt, milk, butter and eggs. Pour mixture over dry ingredients and stir until well combined. Add blueberries and gently stir just to combine (be careful here, don’t want to mash the blueberries!)

Lightly coat a nonstick skillet with nonstick spray or coconut oil. Scoop large spoonful of batter (for each pancake) and cook until bubbles appear on top and underside is nicely browned, about 2 minutes each side.

Serve with real, organic maple syrup (not the high fructose corn syrup kind!)

Baked Chicken with Basil and Tomatoes

Cook's Note: My very sweet neighbor made this dish for me last year when I was going through a hard time and didn't feel like cooking. It was so delicious and I asked her for the recipe because we loved it so much! She directed me to a book called "Dinner: A Love Story" and I found that she had a blog too. What a delightful recipe this is and it really is made with love. This recipe takes a little effort, but trust me, its well worth it! I have modified the recipe slightly and encourage you to make this dish at home. Your family will feel like they are dining at a 4 star restaurant. 

What You Will Need:

5-6 Boneless, Skinless Chicken Breasts
2 Tbsp Extra Virgin Olive Oil
1 small onion, finely chopped
2 cloves of garlic (minced)
1 15 oz can of diced tomatoes
1 tsp Rosemary
1 tsp Oregano
3 Tbsp Light Ricotta Cheese
3 Tbsp Light Cream Cheese
Fresh Basil (2 springs or a handful) finely chopped
Fresh Cracked Pepper and Sea Salt to Taste

Directions:

In a large skillet sear 5-6  large boneless skinless chicken breasts over high heat in olive oil, about 2 minutes a side. Remove chicken from pan (no need to be cooked through, just ensure they are browned on each side) and place into a glass baking dish coated with olive oil.

Turn down stove heat down to medium and add onion and garlic (add more olive oil if you need to). After about 2 minutes, stir in diced tomatoes, rosemary and oregano and simmer on medium/low for  about 15 to 20 minutes.

Stir in Ricotta Cheese and Cream Cheese and add in Basil.

Pour sauce mixture over the chicken (which is already in the glass baking dish).

 Bake at 350°F for 25-30 minutes. Serve family style, add sea salt and pepper to taste.

CopyCat Poo-Pourri Toilet Fragrance Spray (made from Essential Oils!)



I continue to see this toilet fragrance spray in the stores called "Poo-Pourri" - which is a very clever name, I might add! You spray it in the toilet before you go #2 and voila - no odor! Great little gadget to have in your purse in emergency situations when in public I suppose!

I also continue to see numerous posts here and there on Pinterest (where else?_ on how to make your own DIY version of the store brand spray, so I thought I'd give it a try. 

The spray is made with Essential Oils, Rubbing Alcohol and Water - very easy and much more cost effective than the name brand. 

Give it a try and see what you think....We have tested it and it works like a charm! 

What You Will Need: 

1 Quality Spray Bottle (mine was aluminum from the Health Food Store - around $3)
30-40 Drops of Essential Oils of your choice (I used Lavender and Wild Orange essential oils mixed together - interesting fragrance and worked great - anything you like will work)
1 Tsp of Rubbing Alcohol 
Water


Directions: 

Get your spray bottle, screw off the top and stick a funnel in the top - pour in your rubbing alcohol, essential oils drops and then top it off with tap water. Screw the top on the spray bottle and then shake the bottle vigorously to mix. 

Now, when you are ready to use - you spray the toilet bowl with 3-4 sprays just before you go #2 and no stink or odor.

Slow Cooker Cheesy Potato Soup

Cook's Note: I am always looking for family friendly and easy recipes to make and this one came across my Pinterest news feed and it was a winner! Made this for dinner and the entire family loved it - plus, bonus - its LIGHT! This is great served with a side salad and maybe some french bread! I only made slight adjustments from the original recipe. You can play with it and make it your own.


What You Will Need: 


10 oz. can cheddar cheese soup
32 oz. chicken broth
Good Helping of cracked black pepper
Good Helping of Ground Sea Salt
half a block of ⅓ less fat cream cheese (Neufchatel)
32 oz. frozen bag of shredded  hash brown potatoes (country style potatoes)

Directions: 


Add cheddar cheese soup, chicken broth, and black pepper to your slow cooker. 
Let the Cream Cheese soften or come to room temperature (if you can wait) and cut the cream cheese into cubes. Once softened, stir into  the cheese soup mixture. This will not really dissolve into the broth until it starts to get warm and melt, so you will have to leave it in there like this.  There will still be chunks of cream cheese, but trust me, it will melt – just stir again later.
Add the bag of frozen potatoes to the slow cooker. Stir to combine well.
Place lid on the slow cooker and cook on low for 6-8  hours, or high for 4-5 hours.
Add salt and pepper to taste. Serve in bowls once ready  and crumble bacon (such as Turkey Bacon) on top for a really yummy taste. 

Serves about 6 large bowls of soup.
